Year 2022 lunar new year falls into 1st of February. It is another year of not being able to go back home thanks to the global pandemic situation. I am very frustrated with this on-going situation and neverending travel restrictions, I guess for most of you reading my blog now feel the same as me. As new year is getting closer, it is time to bake some new year goodies to cure my homesick.
If you don’t know already, in Malaysia we celebrate 4 different new year, the new year countdown for 1st of January like everywhere else in the world, the lunar new year, the muslim new year and the hindu new year. And this coconut cookies, you can find it easily during the lunar and muslim new year, whenever you pay a visit to your friends and family. I am that shameless guest who usually holding that jar of cookies and eating non stop.
Ingredients of New Year Coconut cookies
Unlike my Coconut oil chocolate chip cookiesrecipe which is more of an american cookies and has a subtle hint of coconut aroma, this malaysian coconut cookies recipe has a much stronger coconut scent, it is crispier and has more crust. If you prefer this kind of cookies, this recipe is definitely made for you.
- 170g butter
- 30g coconut oil
- 115g caster sugar or granulated sugar
- 115g dessicated coconut
- 230g all purpose flour
- 30g corn flour
- 1/2 teaspoon vanilla extract

Malaysia New Year Coconut Cookies

170g butter
30g coconut oil
115g caster sugar or granulated sugar
115g dessicated coconut
230g all purpose flour
30g corn flour
1/2 teaspoon vanilla extract
Directions
- Preheat the oven to 200C.
- Use an eletric mixer to beat your butter until soft and fluffy.
- Add the castor sugar and continue to beat it till soft and creamy
- Add in vanilla extract.
- Mix in the flour and corn flour, continue with the high speed mixing.
- Add in dessicated coconut and continue mixing. Mix until the dough becomes a big clump of dough and stop.
- Take a tiny bit of the dough and roll into balls (this makes 20-25) depending on your size
- Press each ball down with a fork to flatten the dough
- Bake for 10-15 in the oven at 200C minutes till nice and golden. Store in an airtight container and enjoy!
